First of all, welcome to CT!
As far as putting your dream set together, it entirely depends on how badly you want the set-- i.e., what you are willing to pay. At $5/chip you'll be able to buy as many as you want from multiple sellers (heck, I've got 1250 in all denominations plus plaques for that price). If you are looking to get a bargain price (say, $1.50 or less a chip), you'll have to rely on eBay and it could take you a year to two or more to put a set together.
If you really want 1000 by Christmas, I would say be prepared to pay more than $3 per chip, maybe even closer to $4. I would say the 'market' price of the Isthmus chips is much less, (probably closer to $2 each), but you won't find many sellers for that price. Lots of chip collectors bought them for more than that price, and don't like to sell at a loss if they don't have to.
The best advice I can offer would be to watch the M2M sales, where occasionally you can score a deal from someone needing quick cash. However, if you simply must have the set and are willing to pay for it, you also shouldn't have a problem. However, as someone who owns both, for the $ I would personally opt for the Casino Royale chips-- same geek cred, MUCH better price/value.
