I have had both Mirage Springs and Dodge Cities and neither one have any $500's available. You probably could get around this with some extra $100's but facts are facts. In my opinion, both of them make a better cash game set than tourney set.
The Mirage Springs chips are not V7. I don't know exactly what thy call them. I have asked and I have not gotten an answer but they are definately a little different. The mirage Springs chips have a little edge break on them where the Dodge cities the edges are much more square.
They are both really nice chips, but I would tend to say that the Mirage Springs are a little nicer. The biggest reason is that most all of the inlays on the Dodge Cities are slightly yellowed and the chips appear to have seen more play. The Mirage Springs chips are in almost pristine condition.
