How would you solve this?

I might host a poker tournament in our forthcoming stag party. We have 29 participants. I will put my used Empress cash set into play (if we play at all). Since we are gonna be more or less drunk, I'm not gonna carry my better chips into play. Plus this set goes handy in a 1000 chip aluminium case (it is my portable set after all ).

Set breakdown is:
300 x $1
400 x $5
200 x $25
100 x $100
30 x $500
Total bank of $32 300 (if I counted right), that is a bit over $1 000 per player, if everybody plays. Game time maximum 3 hours.

What kind of tournament structure would you make?

Ah. Thanks. BlindValet had renewed itself. It now has denom of 1 too. Didn't even though about that web page at all.
