One player can't make it tonight so we're down from 8 to 7 people.

Usually start off with 5000 chips and am unsure whether to keep it at 5000 or give everyone an extra 700 chips or so so there's still the same amount of chips on the table for when it comes down to 3/2 players and the blinds won't seem as crazy?

There's nothing wrong with your idea, but it just sounds absurd to me. Have you never had a tournament start with < 8? It doesn't really play any differently; start it with the usual T5000 and it just might end 1 level earlier. Or if you really want it to last the (exact) same amount of time, then add 1 or 2 minutes to each blind level.

If it was me, I would keep it at T5000 each.

I decided to keep it at 5000 in the end, didn't really make much difference at all, just like you said, finished maybe one or two levels earlier.
