With 12 reasonably active players and no antes, you can expect the tournament to end when blinds are around 100k/200k or 150k/300k. You'll probably start your structure at 1k/2k (150xBB starting stacks is only slightly on the deep side - I like it!), so you just need them to increase such that you get to 150k/300k around the 5.5 hour mark.
Personally, I like the blinds to double at a constant rate: usually 2 levels (if levels have the same duration) or every 30 minutes (my levels vary in duration because I want to have them doubling every 3 levels when they get big; makes the step size between levels more manageable) or something like that ...
Blinds double every 2 levels (50 minutes) after round 2, then double every 3 levels (60 minutes) after round 8. That gives a tiny bit more time for those tough decisions when the blinds are getting big compared to chip stacks.
Should be heads-up (or at most 3-handed) by the time you get to the 2nd break, so 15 min rounds won't seem short (you'll still get lots of hands in 15 min if they don't decide to chop).
It'll still last 5 - 5.5 hours of play, + 25 minutes for breaks. In fact, you might want to squeeze in more breaks, especially if there's drinking. 3h:15m between breaks 1 and 2 is a LONG time imo...
A good rule of thumb is that the tourney should end about when the blinds (and antes) equal about 10% of the total chips in play.
So 12 people x $300K stacks and no rebuys = $3.6MM in play. And 10% of that is $360K, so your target blind level for 5 hours should be about $120,000 / $240,000. Something like the 100/200 or 125/250 shown in the previous posts.
YMMV of course depending on playing style, breaks, beverages consumed, etc.....
