Spirals are really easy, once you get the hang of it.
The trick is to build them one layer at a time, as opposed to starting with stacks of chips and trying to turn them into a spiral.
Try this:
Lay one chip flat on the table. Take six more chips and place them around the first (center) chips. So you have a hexagonal arrangement of chips, witn an additional one in the center. That's layer 1.
Now put another chip directly on top of the center chip. Take six more chips and again place them around the center chip. Except for this layer, place the chips so they are slightly offset from the layer below. For example, line the outside edge of the chip with the insert of the chip below it. So layer 2 will be slightly rotated from layer 1. Note that the chips on layer 2 (other than the one in the center) will lap over two of the chips in the lower layer.
Just keep doing this until you run out of chips.
These structures are extremely stable, quite easy to do, and they look great.
After you're done with your spiral and it's time to put the chips away, try "unscrewing" the spiral into straight vertical stacks.
