I'm not aware of their being two versions of all of the vineyards, though there are two variations of the $100 chip and maybe the $.50 chip if memory serves.
Other than those I think there is only one version.
There are, however, more than one version of commemerative Vineyards, one of which is a clay chip made on BlueChip's Flame mold. It is possible that you saw some of those and thought they were a second version.
As far as the price, some of them are extremely rare, though I don't know exact numbers. I think there were only around 500 of the $500 chips printed so they go for a very high price. Other than that it seems that the red $10 chip is pretty rare. The $25 and $20 chips also bring in pretty high prices due to rarity and I think in the case of the $20 chip attractiveness. (Just my opinion on those.) Someone else out there probably knows more exact numbers on the print runs, but I hope that helps.
Any of the real Paulson Vineyards above $5 are fairly rare and go for a lot of money on ebay (probably the ones you're referring to). There are plenty of $1 and $5 chips that usually go for around $1.25 - $2 / chip.
The Chipco and Blue chip commemratives are production chips and are not worth anything, just nice looking nock offs.
