Does anyone continue buying different sets of chips, so they can keep playing with different sets of chips ?

It depends. If racks or even entire chipsets are available, by all means I like to buy them in quantity. Some though are only available individually due to being price prohibitive to buy in quantity or even simple availability issues.

As far as buying multiple sets - yes indeed. Buying multiple sets for me though is primarily from a collector standpoint and has little to do with playing with them since I don't like to play with mint chips that I might want to resell later.
