Seriously! How are those of us who DON'T have it supposed to compete with those who do? It seems like a major advantage.
I either have to do some mac/crossover/parallels/bootcamp investigation, or just get real antsy waiting on PT3 to be available on Mac.

The stats listed for me are only the stats for when I was sitting at that table during that particular session. This is so you can see what others will see if it is their first time playing with you and the have PT. Now if you are sitting with someone who you have played with before and they have kept stats on you then their PT would read the additional hands from their database and give a more realistic picture for them. But the same works for me if there is anybody at the table that I have played with before. Which if you have played cash games and multi-table then there are usually 3-4 people who are sitting at all of your tables. Which in that case your number of hands for them really starts increasing and you get a good idea of how they play.
For tourneys it works pretty good if you are playing the same tourney over and over especially if you are playing $50+ buyins. This is because there are not 2000+ entries, so you keep playing against the same basic group of players. I would say it is good for tourneys with 1200 and under entries.
PT3 is an AWESOME tool. There are still a few bugs but they are being worked out.

Yeah, I was referring to PT in general, not just PT3.
For me, it has nothing to do with the $90. I run a mac and I don't want to spend a crapload buying Windows to run a dual boot, just for PT3. I'm trying to play micro-stakes to improve until the PT3 Mac beta comes out...
I just have VPIP, PFR, hands, and 3-bet % on the screen. Then I configured my own drop down menu to have all of the stats I want broken down by street and more neatly organized. First pf, then flop, then turn, then river. I think I need to add some more stats to it, but TBH none of them are going to be valuable till I have at least 10k hands on someone unless they are doing something crazy (like 4-betting a huge amount, calling 100% of 3-bets, or raising every c-bet etc etc).
I think that is the best way to do it in order to keep the screen from getting too cluttered while still putting all of the info you might want at your fingertips.
