Playing 5CD or lowball is strictly technique, very little imagination is required.
I can't speak for stud much, as I'm no good at it. It appears to be very mechanical also from the outside.
NLHE is the single most creative card game around.
Stud is probably the hardest version of poker to play. There is so much to keep track of. NLHE is probably the easiest form to play (of the HORSE varieties). It's also a lot harder to bluff in any sort of limit poker.
The No Limit form of Hold'em by its very nature attracts people because even a fish can have a big payday. This is evidenced by some of the people that make final tables on TV. In limit games this just would not happen.
I agree that No Limit allows people to be creative, but the part I like about stud games is card memory. The thing I like about stud variations is card memory.
Don't get me wrong. I like hold'em, but I like to mix it up and I don't want to play any one game exclusively.
