I thought these sites were a license to print money. In my industry, we call this a "croupier" business. You make money no matter what. Why would an owner be involved in this? It only makes sense that someone would hack these sites eventually.

the owners probably aren't. But the owners had to hire programmers to do work, especially the most recent overhaul of the software. Some people have pointed out in the 2p2 thread that if you didn't have a very meticulous audit of all of the work done it would not be difficult for a programmer to have figured out a way to create such an account or hack the system. Then it would only be a matter of getting the information to someone else and having them do the leg work.
AP total denial of everything (including the blatantly obvious chip dumping) certainly adds weight to very plausible theory that it was an inside job that they are trying to cover up.
