8 is usually the number you see for Stud tables, but 9 isn't unheard of. It's very unlikely that you'd have all the players all the way to the 7th card. In the rare cases where you do, if there aren't enough cards in the deck left for each remaining player to get one, a single card is dealt face up and is used as a community card.
I haven't really looked at it closely, but I believe most casinos limit their Stud tables to 8. I think they have slightly shorter tables for Stud also since you only need 8 spots instead of 10. That might not be the case everywhere though especially in places that would want their tables to be flexibile for other games and not just Stud.
