Limiting the number of denominations in play can make cheating a lot less practical. Obviously tournaments will require more denoms than a cash game...but it's harder to sneak in 50 of the 100s, or 5 of the 1000s, than 1 of the 5000s. Color up less, I guess.
You could also get just a few inexpensive labels, print them yourself, and then just label the highest denomination chips...that would save some money...and if somebody wants to carry in a pocketful of your lowest chips, let 'em try...
