Basically, I think it's more a matter of "want" than "need" that many colors.
For tourneys, 3 colors seems sufficient, with maybe a few of a 4th color to support rebuys and maybe colorups.
If you had non-denom chips, that's all you'd ever need. However, the case for more colors (denoms) is this:
1. If you play both cash games and tourneys, AND
2. If you want to always play the chips at face value (i.e. not using $25 for $0.25), AND
3. You want to play tourneys for T$ >> buyin$ (e.g. $20 buyin gets T5000)
Then you basically need two sets: 1 big denoms for tourneys, and 1 small denoms for cash. So you'd need twice as many colors and twice as many chips.
One other scenario I can think of requiring lots of denoms:
1. You want to play cash games with the chips at face value, AND
2. You play a wide range of cash games (e.g. anywhere from $0.01 to $100 blinds)
