In some Cali poker rooms (Hawaiian Gardens etc...), chinese poker is very popular. It is very intimidating to just jump in as a beginner because it is so fast and their are some many different ways to get points. The players are just flying chips to each other. By just a quick glance, they instantly who they owe money too and start flying chips.
We played a slightly simplified version of this in Hawaii and it was known as Pepito
http://www.thepokergiant.net/pepito.html. In a four handed game, we would either have a rotating dealer or we would all compete against each other.
If we have a
rotating dealer (or someone could stay a dealer if they choose), the other players would have to beat the dealer in 2 out of 3 hands to win whatever money they decided to wager against him.
If we all
compete against each other, we would all put in, let say a $1 ante into the pot before the hands are dealt. To win the pot, you would have to win 2 out of 3 hands against ALL players. If no one wins, we might decide to add another ante to the pot until someone wins the whole thing. This version puts in a little different strategy in a sense that if you have a completely terrible or marginal hand, you might try and stack just 1 of your 3 hands to do your part and try to win at least one it so it can be a tie. For example, you might decide to spit your low straight on your bottom (best) hand so you can put 3 pairs to try and win the top (worst) hand and hope that someone else wins the bottom hand.
The amount of ties in this version is very similar to Pai Gow.
In both versions, we designate some very simple lock hands (automatic win). Royal Flush, Straight Flusth, 4 of a kind, no pairs (13 card straight), and 6 pairs (sometimes).
One more thing, to give the dealer the slight advantage and determine where to start the deal, we would flip the first card up after shuffling and give the dealer the

. If the flipped card is a 2, the deal would start one player to the right of the dealer, if its a 3, it would start two players to the right of the dealer, and so on...
If we have more than 4 players, we would usually play in teams. You can also have people sit out hands like the casino.
We used to play some pretty big games in Hawaii with upwards of $50-100 bets against a dealer. I am sure people used to play even more than that too.
