I meant to post this earlier but forgot. A fellow I play with brought this game from another club he spends time with (that ****). I keep the games in my club to casino standards because that's what I enjoy, and even though we didn't add this Stud variation, it was kind of nifty. Some of a mind might find it enjoyable.
Lazy Dealer
(7 Card Stud Hi/Lo variation)
Players ante and the (lazy) dealer deals out 7 cards down to each player. The players then arrange their cards in whatever order they see fit. The cards are placed in front of each player down and revealed one at a time with betting rounds in between. The first round features the usual bring in for low card and from there on lead bet switches between high and low up hand. There's a declare before the showing of the final (7th) down card.
But you're saying that the players can look at their hands and arrange them how they see fit? A little different than "no peek" but it sounds kinda cool. I'll have to try it.

The angle to this is the setting of the cards coupled with Hi/Lo. Most folks will reveal their Ace early since that can give the least information/cause the most confusion.
Again not my cup of tea exactly, but as far as "fun" poker games it's alright.
Anyways, this idea is called "Roll Your Own" in my games. We play a few different games with this happening at the end: 5 card draw, 5/7 stud and Hi/Lo
Ha! Interesting! I might try it out...if I could only get the people I play with to learn more forms of poker. I used tried to teach a friend how to play razz and omaha, and omaha hi/low. He still only plays hold em.
