I'm not sure as to where it might be right now, but before the change on the site, there was an article that Jason E. had authored about chips and labels that would have probably answered most of your questions. A lot of that content is also on Jason's site at

Insofar as the labels coming off, you'll probably have to damage the label to get it off of the chip. They do not come off very easily, and certainly not by themselves unless you damage it with liquids or solvents.
There are several vendors who regularly post to this site and both have an impressive list of testimonials from members of this site. Insofar as quality, I think they both use the same equipment and the same labels from the same source, so materially you shouldn't see much difference.
