Yes, it will be used in a regular cash game with 25c/50c starting blinds. I've played with Sonny's that used $2 and $3 chips (with Riviera quarters) and thought it worked equally as well.
Its my opinion that cash denominations should be closer (2x - 3x between denoms). Tournament denoms should be more spread out (5x).
With tournaments, I'm looking for overall table chip efficiency because (by the nature of the tournament), one guy is going to end up with a mountain of chips. In cash games, it generally stays more spread out which several guys keeping bigger stacks. I like players to be able to make funky bets ($2.75) with chip efficiency (2 chips: $2.50 + $0.25) rather than with a small stack (2 x $1 + 3 x $0.25) or by having to make change.
I haven't played with it in my set yet, but two other cash games I play in (AzCat's and Ryder_8's) both have a $2.50 chip. I intend to give it out with the starting stack:
$0.25 x 12 = $3
$1 x 12 = $12
$2.50 x 2 = $5
If you want more than $20, I'll top you up with fivers or more snappers (probably the first five will be two snappers, and everything after that will be nickels). Rebuys are generally done with the $20 chip which, in turn, gets cashed down at the table... this prevents huge stacks of quarters from developing. Hundies haven't seen play yet, but Detroitdad was looking to borrow this set for a $1/$2 game, so they may see some action.
