The casino, at their discretion, may change the design of their chips and not obsolete the old one. If they do obsolete the old chip, they will have to give notice and have a period of time defined to cash them in. Casinos in general do not like to obsolete chips because uncashed chips=profit. When a chip becomes obsolete, that profit is taxed as income.
I don't think you will ever see a $1 chip at an open casino get obsoleted, its just not worth the hassle. Now if its discovered that a few racks of $500 chips disappeared (this happened in a local casino) there will be a notice, waiting period, and then the stolen chip will be obsoleted and replaced with a new design.
