In addition to what has already been posted to your message, I'll add:

Stardust
Caesars Palace (in poker room) (Note: the new $1's are very similar to old $1's, but they are different; same with the $5's.)
Aladdin (Planet Hollywood) two versions of $1's.
Boulder Station
Binion's (downtown)
El Cortez (downtown)
The Orleans ("2005" issue)
South Coast (all new)
Not sure when you'll be there, but Red Rosck Station opens in mid April.
The Hard Rock does not and never did have $1 chips. They instead had a $1 metal token; 2 versions if I recall correctly. Keep an eye on the Monte Carlo, Mandalay Bay and Circus Circus, as two of the past Mandalay Resorts casinos (Luxor and Excalibur) have changed chips since they were bought by MGM/Mirage.
