MGM Grand is a great casino to collect. I don't know about the value of the chips or their likelihood of appreciation, but they have a lot of variety available, and they've been good looking chips over the years.
There are chips from the old days (before the fire), then some great chips about the time of their re-opening. And now many chips from the current period, including a nice chip from their Poker Room opening in April 2005. So you have lots of choices.
My favorite chip of all time is the MGM Grand Copper Lion from their re-opening. It's a special Bud Jones chip with a mold never duplicated, and features a copper foil image of the lion on both sides. I have a bunch and buy more whenever I see them at a reasonable price. The $1 chip you reference is from the same period (1993-95). I have a few of those and they are nice Bud Jones chips. The edges aren't as fancy as the $5, but the copper foil lion is beautiful.
