I'm going to go off the deep end a bit and disagree with the others.
If I were doing 1000 chips for a NL game, I'd do as follows

800, 100, 100 -- you could even get by with 900-100

Assuming the blinds don't go up in the evening, you need

1. a chip for your blind.
2. a chip for your basic bet.
3. (maybe) a bigger denomination chip for rebuys.

Was playing 1/2 NL at Foxwoods recently, they use $1 chips and $5. Other casino chips aren't even welcome at the table. It worked just fine.

Thank you guys. It's been a while since I posted this and thanks to all the help from people replying in this thread I think I have come up with a pretty good chip breakdown. I will most likely go with this:


500 Chip Set
---------------
$100 x 200 = $20000 (chip split, players/bank = 200/0)
$500 x 200 = $100000 (chip split, players/bank = 160/40)
$1000 x 100 = $100000 (chip split, players/bank = 100/0)


$20000 in Starting Chips (5-10 Players)
---------------------------------------------
Each player starts with $20000 in chips:

20 x $100 = $2000
16 x $500 = $8000
10 x $1000 = $10000


$10000 in Starting Chips (11-20 Players)
-----------------------------------------------
Each player starts with $10000 in chips:

10 x $100 = $1000
8 x $500 = $4000
5 x $1000 = $5000


Minimum Chip Count in the Bank before the tournament starts
-----------------------------------------------------------------------
0 x $100 = $0
40 x $500 = $20000
0 x $1000 = $0


As you can see above, the chip breakdown above will give me the perfect amount of $500 chips in the bank when coloring up the $100's on the table.


The tournament structure isn't finished but let's say it would look something like this:


Tournament Structure
-------------------------
Level 1 $100-200 (20 min)
Level 2 $200-400 (20 min)
Level 3 $300-600 (20 min)
Level 4 $400-800 (20 min)

Level 5 $600-1200 (20 min)
Level 6 $800-1600 (20 min)

remove the $100 chips

Level 7 $1000-2000 (20 min)

Level 8 $1500-3000 (20 min)
Level 9 $2000-4000 (20 min)

Level 10 $3000-6000 (20 min)
Level 11 $4000-8000 (20 min)

Level 12 $6000-12000 (20 min)
Level 13 $8000-14000 (20 min)
Level 14 $10000-20000 (20 min)

Level 15 $15000-30000 (20 min)
Level 16 $20000-40000 (20 min)
