I've just bought a set of 710 casino chips, consisting of

235x $1
118x $2
118x $5
Now, it like keep 300-400 of these chips for my own and sell the rest. Which breakdown would you recommend for the chips I keep for myself?

I guess it depends on what you want to get out of your sales. Are you just looking to get rid of the extras at any price? If you want to get the best price, you might need to sell in small lots. Or put together a playable set to get a good price. If you're just in a hurry and want to get rid of them then it doesn't matter.
With those denominations, it looks like this will be a cash set, not a tournament set. If that's the case, I'd keep:
50 x 50¢
100 x $1
100 x $2
50 x $5
for a 300 set, and
50 x 50¢
150 x $1
150 x $2
50 x $5
for a 400 set.
If the 50¢ chips are nice and from a real casino, they could be valuable to sell.

yeah I'd rather like to get the bset price for extras, but I'm not in a hurry. Is ebay the best place to sell, or are there any better?
The chips originate from a charity casino, called Athletic Club, somewhere in North Dakota. The chips are hotstamped Paulson chips.
And if I use the chips for a tournament, what breakdown should I use then?
