Your breakdown gives you $1,345 in total chips. If you have a full ring game of ten players I think a $100 buyin makes the most sense and gives you 3 rebuys.
With a $100 buy in you could run a $2/4 game but that would be a little tight with only 25 times the BB. You might be able to squeeze a $3/6 game out of that but you'd probably have to play with cash on the table at some point if you had one person who had a really big night.
Until just a few weeks ago I was in the same position as you. I had put together a 500 piece set for low limit games and wanted to move up.
My set was broken down like this:
100 - $.25's, 350 - $1's, and 50 - $5's
I originally built the set to play either .50/$1 or $1/$2 full ring limit game. With that breakdown I was stuck with a $50 buyin and the $1/$2 was tight.
I just added 200 more (50 $1's, 140 $5's, and 10 $25's) to bring my total up to $1625 and can run a $2/$4 game without any problems. The initial buy in is typically $100 (40 $1's and 12 $5's) and if needed we use the $25's for rebuys. The rebuyer then buys chips from the big stack(s) at the table.
