I plan on playing 10c/25c and 25c/50c NLHE. I have the following chips:
360 Day Blue Cherries for 10c
200 25c (MGMs)
100 50c (AJs)
100 $1 (PNYs or Vineyards)
100 $5 (PNYs)
Is this breakdown sufficient for both game limits? Should I add any more chips? I think I should add more $1s. I would be hosting games for about 8 players. I can't really add more 50c chips.
What do you think the chips per person should be?
I think the .50 chip is probably unnecessary and you'd probably be better off just getting more $1 chips. And you probably don't need that many 10c chips - it's only going to be used for the SB so you won't need too many of those.
EDIT: I just reread your post and it sounds like you already have all these chips. Ignore my previous comments - put those chips into play I do agree with you about more $1 chips.

As for the Cherries, for the 10c games, the guys and I like to have a lot of chips in front of us. Not too necessary, but enjoyable.

Add 200 $1 chips to your breakdown and you should be good to go.
In addition because this is an eclectic "Collectors Playable Set" choose which color you'd like to use. ($1 PNY and $1 Vinyards are different colors, correct?) Then, pick one or two more chips with that color to add. Just make sure that they are close in overall appearance to the $1's and contrast with all the other chips well.
If you choose to have two types of $1 instead of three types, use 150 of each of the chips.
For your lowest stakes game, I'd play .10/.20 instead of .10/.25. You'd then use your .10, .50, and $1 chips. It takes a lot of dimes for this game, but you have them. You also have enough .50s for this game.
I'm having to make the same decions because I want to start off with the ability to start with 10-20 dollar buy-ins for fun but be able to handle 50-100 dollar buy-ins. I already have a set for 200 dollar buy-ins but thats some pretty serious money for my crowd. I was thinking I'd play 10c/20c blinds nlhe but you need alot of dimes and alot of 50c chips but I decided like you that I wanted 10c/25c & 25c/50c blinds so I decided on this.

I figure that for 10$ stacks I can use 10-20 dimes and 32-36 quarters for an 8 person game. If people want 20$ stacks then I'll add 10-1$ chips for a 10/25 NLHE game. If we want to play 25/50 then a 25 dollar stack will be 16-25c's & 16-1$ plus a 5$ chip and then stacks can go up by just adjusting the 5$ chips to 50$ where you'd have 16-25c,16-1$ & 6-5$. I can use the set for 50c/1$ by making 50$ stacks of 20-25c's, 20-1$ & 5-5$ or 100$ stacks by adding on 7-5$ and 2-20$ chips to the dollars and quarters. Theres still 2400.00 in the bank in 100's and 20's for rebuys and people can make change. Total chips will be 840. Like I said my crowd plays for fun so 10/25 and 25/50 will be the main games.
we usually have between 8 & 10 players and each get this starting stack. If they want $20.00 I just give them 5x$1.00 & 1x$5.00 to total $20.00. I like these amounts because I can keep the game moving quickly as the chips are already cut out and in racks (stacks of 20) ready to go. No counting necessary, just grab a couple of rows and play on!
I have 360 .10, 360 .25, and plenty of 1.00 and 5.00 to spare, but i really don't need that many for my cash game. I have that many mostly for torunament's as well.
