If you're willing to play T800 with that starting chipstack (10 x T5, 10 x T25, and 5 x T100) - which seems workable -- then you could support 30 players' starting stacks with:
300 x T5
300 x T25
150 x T100
-----------------------
750 chips total (25 chips/person * 30 players)
For this, you'd need to add 100 x T5 + 100 x T25 + 75 x T100 to your existing set.
So far, this doesn't provide for colorups or rebuys.
For colorups, you already have 50 X T500 = 25,000
The buyin is 30 * 800 = 24,000
So... the 50 T500 chips you already have would be enough to colorup all the chips in the game, as far as tofal value goes. Of course, the chips won't be distributed so evenly, so this wouldn't be very easy. In practice, though, you probably don't need to colorup all the 100's. You could colorup some of them, then re-use those 100's to help colorup the 25's, and so on.
Similarly, you could use the T500 and T1000's for rebuys (making change from players to get the T800).
So rebuys and colorups seem do-able, just a bit akward. You could make your life a bit easier if you bought some extra T100 and T25 to help the rebuy and colorup process.
