I believe that's what is called a 'limit' game. That's the kind of game that you'll find in most casinos and cardrooms. Back in the day when they had $1/2 games in cardrooms, the only chips on the table would be 50¢. These days with $2/4 or $3/6 being the small stakes tables, you'll find $1 chips as the chip in play at those tables (and also at $4/8 Stud games).

The you probably only need ones and fives. Having the 5's instead of quarters will make them more inclined to play the chips as well. Don't really see a need for $25 chips with a $100 buyin unless you're trying to keep the number of obstructions on the table to a minimum (as maybe on a blackjack or craps table).

There aren't near enough $1 for 10 players, if you're going to have that many, unless as you mention, there's going to be a lot of change-making going on at the table. I think you'd want to start with at least $40 in ones, if you're going to play anything serious. After all, when real cash is on the line, you're a lot less likely to see people acting out their TV fantasies with all-ins.

i've used 20 x $1 lots of times, and it's worked out fine. if you have 200 $1 chips on the table, and no one ever needs more than 4 at a time, you've got plenty. in my game, if someone's going to raise pre-flop, it's going to be to $5-6 bucks. don't need a whole lot of $1 in that game. if the typical raise in your game is to $4, then you're playing a game that needs more $1's.
when you go to the MGM or the Mirage (or wherever you like to play) and buy into a 1/2 NL game, you get a stack or two of reds and make change at the table. as long as you have some $1 left in the bank, you're fine.
