Here's my recommendation... basically what I did for a T20,000 NLHE / T50,000 for HORSE (starting with 100 antes for the stud-type rounds):

T50,000 starting stacks (8 players) are:
20 x T100
12 x T500
12 x T1,000
6 x T5,000

T20,000 starting stacks (10 players) are:
20 x T100
10 x T500
13 x T1,000
(or 8 x T1,000 and 1 x T5,000, if you prefer)

I find that you don't need very many T500s; prefer to colour up T100s directly to T1000s (and T500s directly to T5,000s, and T1,000s to T10,000s), since you only ever need 1 x T500 (or 1 x T5000) at a time for betting purposes... So my overall breakdown looks like:

200 x T100
100 x T500
160 x T1,000
80 x T5,000
60 x T10,000
------------------
800 chips total

That should leave you with plenty of chips for colouring up, add-ons, re-buys... whatever! And when it gets down to 2 or 3 players, we find it simplifies counting to get as many T10,000s in play (and limit the number of T5,000s) as possible.
