Okay so I have some blanks in there and I also know that I am probably missing some chip values as well (like a $50 chip?). If anybody can help with colors, missing values, or possible provide some more links to places I can do more research I would greatly appreciate it!!
(I should add that I know in other parts of the world these colors are used for different denoms. I am just trying to come up with a consistent list for myself.)

You got these right, and the ones that are missing have never been made (meaning that if a casino wants to get one made its an act of the NJ government to come up with a color --- and if they cant agree on a budget how the heck can they come up with a color). And the 50cent was made in blue (they changed the rules in '82, the only AC 50cent was made prior to that).
A couple of years ago, Tropicana was thinking about a $3 or $4 chip for their poker room, after starting the process they decided against it. In LV there is no consensus among the casinos - or even within the casino however many of the casinos uses red for $5.
Here's an example - four $1 chips from Binions Horseshoe, an early one (50's), then 80's, then Harrahs in 2004, then MTR in 2005. All different colors.
