But the greatest tribute you can give is to honor his life in some way that lives on. A commemorative chip sounds like the perfect keepsake, for his family and all those who knew him. What a wonderful way to remember him, and a fitting reminder of the good times he brought to your group.
Maybe you could "donate" the buy-ins from your next poker tournament to getting a commemorative chip made. Then play the tourney with an empty chair for him, laugh about the things he used to do, quaff a few of his favorite beverages, and say good-bye with laughs, tears, jokes, and anything else that comes out.
