In NL the swings can be out of control. People can bust out in the first half hour. Have a min/max buy in scenario is key. My preference for a NL set up is .25/.50 blinds, $25 max/min buy in and you can only rebuy when down to $5.

My main cash game is $50 buy in (unlimited rebuys), with $5 max bet on any street. This seems to work pretty well. You can get big pots and make decent bets but it does control the chaos some. This might be a bit high for what you were talking about (biggest winner and loser around $200, usual up and downs around a buy in).
