I would say UB and P* have the best interfaces. P* has a better interface than UB but P* deals slower than UB especially with All-ins.

Also, getting UB hand histories use to be more cumbersome as they were not written to disk but Poker Ace makes this easier and allows you to collect data on tables you are not even playing including past hands (data mining); very useful for with PT. I don't believe P* allows or supports data mining.
