I've run a few stud tournies so from my experience (i.e. mistakes) I'd say first off do fewer levels for longer but have the jumps be bigger. The constant changing of ante, bring in, 3-4 streets, 5-7 streets does peoples heads in. In general it takes much longer to play a hand of stud than hold 'em. Give yourself time to get through hands but make the jumps to force action as appropriate.
I'd maybe do something like this (straight limit, implies no re-buys):
$15K/players (20X$25/50X$100/11X$500/4X$1000)
Ante/Bring in/3-4 Street/5-7 street
25/50/100/200
50/100/200/400
75/150/300/600
100/200/400/800
125/250/500/1000
150/300/600/1200
200/400/800/1600
250/500/1000/2000
That's just a quick something I came up with based on the chips you have. The formula is a bit agressive but you can mellow by making the levels longer as I suggested.
