I think I'd stay with 5/10 for starting blinds, but just shorten your rounds a little bit. We usually play 20 minute rounds at the beginning and usually move to 15 minutes when we're down to 3 people. And there's really no reason you can't make a change part way thru the tournament, as long as everyone agrees to it. If you start out with 30 minute rounds and it just seems like it's going to slow, just take a vote and speed it up a little. It can take a few tourneys to find the right mix.
