I suspect that was more for lyrical value than talking about gambling. The song was written by Townes for The Cowboy Junkies after he toured with them back in the early 90's. Great song, but I don't think it's really about gambling.
As for songs that perhaps should be on the list, what about "Spanish Train" by Chris De Burgh. The devil and the Lord playing poker for the souls of the dead. How much better does it get?

It doesn't specifically say which card games they're playing, though it doesn't sound quite like poker if it's a 'penny a point' game. So I'm not sure if you want to include that one or not.
