I have some older Paulson chips (both consumer and casino) from the early 80's and they're thinner than the current ones as well. There isn't that much of a difference (about a .1 mm per chip, but it makes a noticable difference with a stack. A stack will be loose in a 2 11/16" rack, a current Paulson or Chipco rack, and you'll be able to fit 21 into a 2 3/4" rack.

A stack of 20 is about a 1/2 chip smaller than a reg. Paulson stack of 20. But this might not really matter as I've heard the new paulsons aren't consistent in thickness. The Dunes ARE really nice though. Stack and shuffle great but the price is a little steep and the $1's are ridiculously expensive.
