Personally, I wouldn't really mind just playing freezeouts. However, whenever we've done it, it's obviously the smallest prize pool of our games and it generally just leads to a very tight game.
I like that the rebuys are there for the fishies to pump up the pot, plus, it gives me a safety net to be able to play a little more loosely to try and take down a big pot early on and I also have insurance if I do happen to take a bad beat.
